Molds and rings shape a dessert without a fixed bottom, which is what makes them the standard for entremets, mousse cakes, layered pastry, and plated desserts.

Stainless steel cake and pastry rings run from 2 to 10 inches in diameter and 3/4 to 3 inches tall, so the same system covers individual portions and full cakes. Red silicone molds come in 24 shapes including hemisphere, madeleine, financier, brioche, baba, cube, cylinder, rose, and petit four, and they release frozen inserts and baked pieces without greasing. Anodized aluminum hemisphere pans run from 2 3/4 to 10 inches for domes and sphere cakes. Ring mold pans from 5 to 12 inches produce the classic center hole shape, and Dolly Varden pans in 5 and 7 inch handle tapered novelty cakes.

Rings need a base. Set them on a silicone mat or a parchment lined sheet pan for baked applications, or on an acetate lined board for frozen and set desserts.
