I have been baking for many many years and have always used fat daddios pans. I had always used the 10 inch pans for my cheesecakes but recently needed to offer a 9 inch for my business.

Great quality
I bought 2 of these and 2 of the little individual cake pans to test them out for my toaster oven, which can take a 1/4 sheet baking pan but cannot take most cupcake tins. These are gorgeous and look like they will last a very long time. I'm quite happy, and pleased I won't be introducing aluminum into my diet. :)

I ordered the 3x3 and I am so pleased with them. When you find the quality tool that complements your effort, you stick with it.
"Slow and low" means baking at a reduced temperature for a longer time, usually 25°F (4°C) lower with 10 to 20 percent more time added. This gentler heat helps batter cook through evenly, reducing doming, cracking, and dry edges. It is optional, but it tends to produce a flatter top and a more even crumb.
Anodized aluminum is created through an electrochemical process that hardens and smooths the natural aluminum surface, rather than adding a coating. The result is a non-reactive finish about three times harder than untreated aluminum, with nothing to chip, peel, or leach into food. It heats evenly, releases baked goods cleanly, and holds up to acidic ingredients without reacting. This is the standard behind most of our bakeware.
