Anodized aluminum is aluminum whose own surface has been electrochemically hardened into aluminum oxide. It is not a coating applied on top of the metal, and that is the single most important thing to understand about it: there is no layer to chip, flake, scratch off, or break down, because the surface is the pan.

That construction is why Fat Daddio's anodized aluminum bakeware contains no PTFE, no PFOA, and no PFAS, and why it is safe with acidic batters and fillings that would react with bare aluminum. Anodized aluminum also conducts heat quickly and evenly, so batter sets from the edge inward at a predictable rate. The result is a flatter top, a more even crumb, and less doming to trim away.

Care: hand wash only. Dishwasher detergents are caustic and will dull and discolor the anodized surface over time. Avoid abrasive pads. Anodized bakeware darkens slightly with use, which is normal and does not affect performance.
