The PERFECT size! I didn’t want a 2” ring (too small) nor did I want a 3” ring (too large). The 2.5” ring is the “Goldilocks” pastry ring for individual servings in my household! I love that it is steel so I can bake, freeze and clean with no issue. They should last a lifetime, I should think. Love ‘em!

Bake Slow and Low for Better Results
"Slow and low" means baking at a reduced temperature for a longer time, usually 25°F (4°C) lower with 10 to 20 percent more time added. This gentler heat helps batter cook through evenly, reducing doming, cracking, and dry edges. It is optional, but it tends to produce a flatter top and a more even crumb.
Anodized aluminum is created through an electrochemical process that hardens and smooths the natural aluminum surface, rather than adding a coating. The result is a non-reactive finish about three times harder than untreated aluminum, with nothing to chip, peel, or leach into food. It heats evenly, releases baked goods cleanly, and holds up to acidic ingredients without reacting. This is the standard behind most of our bakeware.
