Collection: Silicone Kitchenware

Fat Daddio's silicone bakeware flexes, which is the entire point. A rigid pan needs release. A silicone mold lets you peel the mold away from the piece, which is what makes it the standard for frozen inserts, mousse domes, and detailed shapes that would break coming out of metal.

The red silicone mold range covers 24 shapes including hemispheres from 0.3 to 4 ounces, madeleine, financier, petit four, brioche, baba, cube, cylinder, rose, half egg, heart, muffin in three sizes, and larger floral crown, floral star, and holiday tree forms. Silicone baking mats in quarter and half sheet sizes replace parchment on a sheet pan and give a reusable release surface for cookies, macarons, and sugar work. The silicone work mat gives a full rolling and shaping surface for dough and fondant.

Silicone conducts heat poorly compared with aluminum, so bakes in silicone usually need slightly longer at the same temperature and will not develop the same crust. Set silicone molds on a sheet pan before filling so they stay level going into the oven.
